The recipe for the Breton cake

The ingredients:

  • 250g flour
  • 250g of half-salt butter of course!
  • 250g sugar
  • 6 egg yolks

Preheat your oven to 200 degrees.

Using your food processor or your hands, mix the flour and sugar.

Add the butter in small pieces, incorporating it into the flour and sugar with your fingertips, or with the knife of the food processor.

Dig a fountain and put the egg yolks in it.

Knead the dough by hand and make a ball. Flatten and bring to the dimensions of a 24cm pan.

Place the patty in the pan. Brown with egg yolk and draw large crossed stripes with a fork.

Place in the oven and bake for 50 minutes first in a moderate oven, then reducing the heat towards the end of cooking.

Do not leave in the oven after baking, otherwise it may continue to cook and be too hard!

Let cool before removing from the pan.

For a change, I add an apple or two. I put a base of dough, on top of apple quarters and then I cover with the rest of the dough. My hosts love it!

I keep the whites for meringues, financiers, coconut rochers…
